Today I am going to make toor dal.

Its also known as arhar dal.

So I am going to make two versions of it.

One with vegetables

and one with just chaunk with butter and spices.

Here I have 1 cup of toor dal.

Which I have already washed and soaked for about half an hour.

So we will pressure cook this dal with 3 cups of water.

1 teaspoon of salt

1/2 teaspoon of turmeric

1 tablespoon of ginger, finely chopped.

Salt you can put to your taste little bit less or more.

So now I have the pressure cooker on medium high heat.

After dal boils I am going to reduce the heat to medium

and let it cook for about 6 minutes.

After that you have to wait for about 10-15 minutes

before you open the pressure cooker.

So by that time all the steam should dissipate.

While my dal is getting ready I am going to make the vegetable chaunk.

I have already cut my vegetables.

1 small tomato, I have chopped fine.

6 string beans, cut about 1 inch long.

1 small zucchini

I like to cut them in cubes and I do not remove the skin.

I will use 2 tablespoons of ghee also known as clear butter.

Pinch of hing

2 bay leaves

1/2 teaspoon of black mustard seeds

1/2 teaspoon of cumin seeds

1/2 teaspoon of red chilli powder

So my heat is on, I am going to put 2 spoons of ghee.

And wait till ghee gets hot before we put the spices.

So I am going to start putting the spices.

Pinch of hing.

1/2 teaspoon of cumin seeds

1/2 teaspoon of black mustard seeds

2 bay leaves

And 1/2 spoon of red chilli powder.

Just stir it just for few seconds.

Now I am going to add all my vegetables.

Mix it well.

Let it cook on medium heat for about 4-5 minutes.

So vegetables should be tender.

Dal seems ready.

So lets open and check it out.

And mix it well so they don't have any lumps.

And see the texture its about right just add little bit more water.

Dal you can really thickness you can adjust to your taste.

In Gujarat they like very liquidly and in Punjab they like very thick.

I am usually in between.

Now I am going to add in this 1 spoon of garam masala.

Which is a mix of different spices.

And you can buy this in Indian grocery store.

And 1 spoon of mango powder.

Going to mix it with little water before I add to my dal.

It just easier to mix it this way.

Its ready.

And my vegetables are also ready.

It has been cooked for about 3-4 minutes.

This dal I am going to divide now in 2 parts.

Half dal I am going to use with vegetables.

And other half I will keep it for just plain spicy tadka.

Now I will be making the chaunk or tadka for my plain dal.

So I will be using 2 tablespoons of ghee called clear butter.

Pinch of hing.

1/2 teaspoon of cumin seeds

1/2 teaspoon of black mustard seeds

4 whole red chillies

And 2 bay leaves.

About 1/4 teaspoon of paprika.

My heat is already on.

So lets wait till oil is hot.

Now I am going to put pinch of hing.

Mustard seeds

Cumin seeds

About 4 chillies.

2 bay leaves

And paprika.

Just mix it.

And now just pour right over the dal.

This is done when you are ready to serve dal.

Dal should be hot.

It tastes better.

My both versions of dal are ready.

You can serve these with rice or any kind of Indian bread

like roti and parathas.
