First people collect the milk at home

Then they bring the milk to this local dairy

Here at the local dairy it is checked for the fat content

The price is never fixed it always varies

It depends on the fat content of the milk

More the fat content, more is the price

After that it goes to other big dairies

Like it goes to Nestle, Madhusudhan and all.

And they are made into other products

which includes curd, butter and paneer

But these ones are brown

then there is lots of ghee in it

So it is quite heavy

Now the serving has come down to half a bowl

Now we have half a bowl of bura and ghee

earlier when someone sat down to have rotis

they were served this much bura

Half the plate was full of bura and a small pot of ghee was added to it

Now we have five small serving bowls full of side dishes or condiments

They would have very little sabzis in them

we have 5-6 sabzis

in one there would be curd

in other there would be something else

we are used to this

The thing about food is that

In food we had milk

Like you have guava tree in the farm, so we pluck it and ate

Then we had corns growing in the farms that we roasted and ate

right

And there were channa

The month of March was the time for channa

They were ready by March

The month is referred to as Fagun

In the native language

We arranged some dry grass

lit them, roasted the channa and ate them

I am talking about childhood times

And regarding the food habits

there used to be the thick cream on the milk

At 4 pm the school used to get over

You know what did our mother give us to eat

On top of a roti she would put this much sugar and cream

That was what we ate

Roti has arrived so let eat

Today we will serve you the rustic meal

what is this kachri?

We grow them in the farms

Is it eaten all through the year or only during the summers

it is available during the current season

What all things are added into this kachri ki chutney

In this chutney we add

little chilli powder, salt

garlic and we grind it on a grinding stone

And then we add the kachri to it

After adding the small pieces of kachri, everything is ground for nearly five mins

After grinding it for five mins, kachri ki chutney gets ready

Can you see these seeds

okay they have these really tiny seeds

This is bathua paratha

that is made in desi ghee

Here there is a huge consumption of ghee and butter

If we talk about the food habit of Haryana's farmers

we can see that a it has changed a lot

What they used to have earlier is no more there

Everywhere there is wheat and rice

Earlier the food used to be seasonal stuff

Today everything is available round the year
