How much milk does it gives in a day?

It gives 16 liters of milk.

She is in the seventh month

In the whole day

In one day she gives 16 liters of milk.

There are different breeds of buffaloes

Yes there are different breeds of buffaloes

Which breed is considered to be the best

The best breed is the Murrah one

A Murrah buffalo can give upto 50 liters of milk in a day

50 liters

Ours one is from Kaithal

She is saying that hers one is from Kaithal

Kaithal is a district in Haryana and it has come from there

Much of the thing depends on what a buffalo eats

During winters we feed them Barseen

It is a grass that we grow on our farms

Apart from that during the summers we feed them jowar

Just like we enjoy having roti with ghee

Similarly when you add green stuff in their fodder they enjoy it thoroughly

Along with that there is binole ki khal

That is added to it

When its added to the fodder, the milk capacity increases

First people collect the milk at home

Then they bring the milk to this local dairy

Here at the local dairy it is checked for the fat content

Then the price is assigned accordingly

The price is never fixed it always varies

It depends on the fat content of the milk

More the fat content, more is the price

After that it goes to other big dairies

Like it goes to Nestle, Madhusudhan and all.

And they are made into other products

which includes curd, butter and paneer

Rest there are buffaloes from different breeds

Like buffaloes are mostly black in colour

But these ones are brown

And the horns of the buffaloes are round or curved downwards like this

We refer them as the lady finger buffalo

The ones whose horns are not round but pointed downwards

what are the ones with round horns known as

They are just referred to as buffaloes

Okay. These are lady finger buffaloes

It is the fodder

Yes and here we call it Tudi

This tudi is made into a coop

The tudi is stored in this coop

It is also sold but it is mostly used as fodder for the buffaloes

And it is made of wheat crop

And if it rains then

If it rains water doesn't seeps in

The thing on the top...

It is made of hay

It blocks the water

In the morning we saw the milking of the buffaloes

That milk is sent to the dairies

Now let's show you a finest by product of milk

It is the butter

The cream is churned inside this rai

After churning butter is obtained

Let's taste it

It is said that desa mein desh Haryana, je doodh dahi ka khana

Milk, curd and all the milk products are widely consumed over here

The lifestyle changes that has occurred due to modernization

I don't think this set up is used anywhere in the cities

It is not used in cities and in villages too it is vanishing

But it has this clay pot

then it results in a kind of exercise

Anything prepared in clay has a different taste to it

You have to keep your feet on these two

One and two

Now you pull it

churn the milk

It is getting churned

The butter is then heated and made into desi ghee

So churma can be made from roti, paratha and puri

This is being prepared with puris

Does people prefer it for breakfast

Yes for breakfast

The energy that comes from ghee churma

they have it and then go to the farms to work

It is a great diet for them

And they have it all through the year

To this you added the ghee and sugar

But you can add sugar syrup as well

In this we usually added sugar syrup

We make the sugar syrup and add into this

We will now roll them into balls

round in shape

This is the granulated sugar one and tat is the sugar syrup one

Here comes our desi breakfast

This is the kheer

And this is the churma in which we have added granulated sugar

In this we have added the sugar syrup

And this is butter and rock sugar

What to start with then

let's start with the churma

It isn't just known as churma, it is called ghee churma

And if you see it is quite rich

There are deep fried puris

then there is lots of ghee in it

then there is sugar syrup

So it is quite heavy

come let's try the kheer

very nice. It is very tasty

The kheer made with milk procured from home

and the most important thing is that it has buffalo milk

Which has lots of fat in itself

So for breakfast you have milk, ghee and butter

and along with that you have lassi

All things are made of milk

The butter, ghee and kheer all are made from milk

Let's have the makhan mishri

You take the butter like this and some rock sugar

I eat this during the Janmashtami. It is offered as prasad

This is a part of the prasad that is made at homes

Here everyday butter is obtained so having it daily is must

You call it tindi ghee

Greetings sir

Please come

It is the tobacco

Yes it is tobacco that is mixed with jaggery

In jaggery -Right

For how many years have you been smoking the hookah

Me. I am smoking it since childhood

Earlier ten people would gather together

And they used to fill the hookah

All of them smoked

everyone spoke about their own lives in turns

They kept talking even till evening.

Thus the day passed like that

The kept refilling it and smoking it

You have witnessed a long time here in the village

How much has changed in Singhana

Earlier people were afraid of elders

Now they don't respect the elders much

Earlier it used to be like if an elder is sitting then

Youngsters like them couldn't muster the courage to stand in front of them

They would run away

And they shared good things

Now the times have changed into wrong things

Now we don't understand what all they speak

now they tell inappropriate things

They are complaining against you

What was your work?

Farming -Everyone were involved in farming

What things did you cultivated?

Corn, pearl millet, jowar

Cluster beans

Urad and moong dal

So the lifestyle, food habits, society everything has changed

Yes everything has changed

earlier it was good

Yes it was

the eating culture was so good

Now the serving has come down to half a bowl

Now we have half a bowl of bura and ghee

earlier when someone sat down to have rotis

they were served this much bura

Half the plate was full of bura and a small pot of ghee was added to it

Now we have five small serving bowls full of side dishes or condiments

They would have very little sabzis in them

we have 5-6 sabzis

in one there would be curd

in other there would be something else

we are used to this

Thank you

It is whole wheat flour and we have added bathua leaves to it

Tell us about your lifestyle and food habits

The thing about food is that

In food we had milk

Like you have guava tree in the farm, so we pluck it and ate

Then we had corns growing in the farms that we roasted and ate

And there were channa

The month of March was the time for channa

They were ready by March

The month is referred to as Fagun

In the native language

We arranged some dry grass

lit them, roasted the channa and ate them

I am talking about childhood times

And regarding the food habits

there used to be the thick cream on the milk

At 4 pm the school used to get over

You know what did our mother give us to eat

On top of a roti she would put this much sugar and cream

That was what we ate

Roti has arrived so let eat

Today we will serve you the rustic meal

You remove the skin

I will crush it

No, peel it so that it looks good on camera

I always crush it

That's oaky. You are a young fellow

I hit it like this

If you crush it then its top part will fly away

Papad means skin right

We have with us moong dal parathe

and bathue parathe

Along with these we have lassi

kachri ki chutney

tindi ghee

This is kachri ki chutney. It is a vegetable

You can eat the kachri by itself

It is beneficial

It helps in digestion

what is this kachri?

We grow them in the farms

Is it eaten all through the year or only during the summers

it is available during the current season

What all things are added into this kachri ki chutney

In this chutney we add

little chilli powder, salt

garlic and we grind it on a grinding stone

And then we add the kachri to it

After adding the small pieces of kachri, everything is ground for nearly five mins

After grinding it for five mins, kachri ki chutney gets ready

Can you see these seeds

okay they have these really tiny seeds

This is bathua paratha

that is made in desi ghee

Here there is a huge consumption of ghee and butter

If we talk about the food habit of Haryana's farmers

we can see that a it has changed a lot

What they used to have earlier is no more there

Everywhere there is wheat and rice

Earlier the food used to be seasonal stuff

Today everything is available round the year

So these are the changes

Thank you sir. It was great speaking to you

We got so much information

And we thoroughly enjoyed eating the food sitting in this bed

We had moong dal parathe, bathue parathe, kachri ki chutney

along with that we had tindi ghee

onion, lassi and jaggery

This food was just so pure.

And energy giving

The best part of this meal is this

you know what people did in earlier times

They bought a fixed amount of jaggery everyday

do you understand?

for example they bought 10 grams

You understand it in grams

They used to get that

A small chunk

they had it after food

on eating it everything got digested easily

We should eat jaggery after our meal

It is very beneficial

Now that we are done with eating, I will take a nap on the bed
