Today I will be making meethi chutney

or tamarind sweet and savour chutney.

This chutney you can keep it for couple of months in your refrigerator.

Its very handy if you have it around.

So I am going to be using 1/2 pound of tamarind.

You can buy this in any Asian or Indian grocery store.

Its a seedless tamarind.

2.5 cups of sugar

About 2 cups of hot water.

2 teaspoons of ground roasted cumin seeds

1 teaspoon of red chilli powder

1 teaspoon of salt

1 teaspoon of black salt

This also you can buy in Indian grocery store.

It gives a nice flavor and taste.

But if you dont have this you can substitute it with half spoon of salt.

1/2 teaspoon of ground ginger powder

1/2 teaspoon of black pepper

So first we are going to soak the tamarind in hot water.

So break this with your hands in small pieces.

And pour water.

And I will just mash it with the potato masher.

And keep this for about half an hour before we take out the pulp.

Here I already have my tamarind which already

have been soaking for about half an hour.

And I have mashed it really good with my potato masher.

Now I am going to strain it and take out all the pulp.

Looks like we have got all the pulp out.

I like to keep my pulp thick.

That way if you want to use it as a dip.

If you want to spread it on something

you can add some more water in it.

I am going to put the sugar.

This is 2.5 cups of sugar.

But I am going to save about 1 cup.

Mix it.

And try sometimes if tamarind is not savour.

So you do have to make sure you dont add more sugar.

We are going to put 2 teaspoons of cumin seeds.

1 teaspoon of red chilli powder

1 teaspoon of black salt

You can buy this In Indian grocery store.

It has a very nice flavor and it gives you very good taste.

But if you dont have this, its ok

you can put instead of black salt

you can put 1/2 teaspoon of white salt.

And another 1 teaspoon of white salt.

About 1/2 teaspoon of ground ginger powder.

And 1/2 teaspoon of black salt.

And mix it.

Salt and pepper it can be to your taste.

What I have put is not very hot.

I am going to taste it to see, if my sugar is ok.

I think I need to add half more cup of sugar.

So I added really about 2 cups of sugar.

And maybe 1/2 teaspoon of red chilli powder.

And little bit more salt.

Mix it together.

So my chutney is ready.

And this chutney like I said I can save in refrigerator for

about 2 months.

And you can use this several different ways.

With pakoras, samosas or over the chaat.

You can use this as a dip with any kind of a chips.

And in my family this is a very favorite chutney.

And I always have this in my refrigerator.
