If you're gonna go out on a date with your girlfriend you're gonna make a

philly cheese steak, don't make it a philly cheese steak to eat like this make it

like this. You know what I mean? You're definitely going on that second date bro.

Whoever you are out there doing this for your first date. Yeah

you definitely got the second date that's for sure. Or maybe the wife, the

wife will be very very happy. You're definitely getting a happy wife happy

life moment. You can't say it better.

Cheesesteak! There are very few things in life better than a Philly cheesesteak.

I mean you've seen me make some incredible cheesesteaks in this channel

already. And I'll tell you one thing the original one is fantastic and then I

went to the next level and made the most expensive Philly cheesesteak in the

world. That was just absolutely ridiculous and to say that it tastes

wonderful it's a complete understatement there's a reason why this sandwich is so

popular in Philadelphia. But today I'm gonna show you something completely

different and I'm gonna urge you to give this one a try because this one might be

the best one of them all.

And the first thing we need to do is a bacon marmalade.

That already sounds good even without doing it, and here's how to make it. I

started by cooking up the bacon. I'm using the center cut because it does not

have a lot of fat and whenever you're making this recipe this is exactly what

you're looking for. You want to cook the bacon all the way through, the only thing

you got avoid is to overcook it, and a good sign for you to know when the bacon

is done you when it starts bubbling up like this. Now the next thing you want to

do is to strain it and reserve the fat and also the bacon. And as far as the

bacon go this is exactly what you're looking for. Now using the same exact pan

throw in some butter and white onions. Make sure to deglaze the whole thing. If

you need some moisture you can always add a little bit of white wine, but for

me I did not need any. As you can see my pan is a hundred percent deglazed. Once

the onions are translucent and nice and soft go ahead and throw in back the

bacon. Mix everything well and combine all of those ingredients together. Now

you want to throw a good amount of brown sugar and make sure you keep the heat on

low, you want the sugar to slowly melt so you can make a sauce. Now here's where

your personal preference will come in; the longer you cook the thicker it will

be, if you want it to be nice and runny don't cook it for too long. But as far as

me this is the perfect doneness I'm looking for. They're all nice and glued

together and there's no runny sauce. Now to finish this off I threw in a splash

of balsamic vinegar, followed by a cherry vinegar. Now you want to mix everything

well combine all of those ingredients together and your bacon marmalade is

done. Now I'll tell you one thing this is not only easy to make but it is absolutely

delicious and if you're having a party it is the perfect hors d'oeuvre.

It's so easy to make and so flavorful that once you do it once you'll be making

this many times, that I can guarantee you. Now moving on to the next one this is

not gonna be Philly cheese steak without steak and for that I'm gonna be using

this beautiful dry aged ribeye, which was actually dry aged for a total of 35 days.

how you can do this at home without any special equipment. It is easy to do and

the results is always perfection. Like every dry aged steak the first thing we

need to do is to remove the pellicles, they don't taste good, they don't feel

good and most importantly they gotta go. By the time I'm done with the trimming

I'm left with a beautiful ribeye steak. That is as good as it gets,

because if you see the marbling you already know this is gonna be amazing.

Now let's talk about seasoning and one of the best things you can ever do for a

steak is to dry brine. And all you have to do is put salt on it and put it on a

cooling rack and let it rest on your refrigerator overnight. This will make

sure that the salt penetrates nicely deeply into the meat and make your steak

even better than already is. So into the refrigerator it goes for 24 hours. Now

let's talk about bread. I am a huge fan of sourdough bread. To me it is one of

the best bread there is. Now if you don't have that available you can make it with

anything you like. But there's something to be said about a sourdough bread and

I'm still working on all of my recipes but they are coming out awesome. I mean

as you can see this loaf it turned out fantastic and I know you're gonna ask me

for the recipe but as soon as I'm ready I'll let you guys know so stay tuned for

that. You can even use white bread for this and to be honest with you you

can use any kind of bread for this sandwich but if you do have sourdough

available go for that one. And of course there's nothing better than bread and

butter. So I lightly coated both sides with butter and toasted them up because

as I mentioned before there's absolutely nothing better than sourdough bread and

butter. That is a piece of heaven right there, always butter and toast your bread.

Now moving on to the next and most important ingredient of course it's the

cheese and this sauce is fantastic, remember exact amount and ingredients

always in the description down below for you. in a saucepan throw in a whole block

of Philadelphia Cream Cheese followed by 2 tbsp of goat cheese keep it on the low

heat and melt them together. Once it's fully melted just like this go ahead and

throw in a pinch of Dijon mustard this adds a complex flavor to the cheese

sauce that you can put a grasp around it but

you know it's something amazing even if you don't like mustard throw it in

because you will not be able to taste it. Now really all there's left to do is to

mix it well and your cheese sauce is done. If it gets too thick you can always

add a little bit of heavy cream but as you can see from me this consistency is

perfect. And in the middle of it I was thinking I'm gonna eat this with my

nephew and he's just not gonna be enough so I decided to make an additional steak.

And the reason was because I was gonna have additional guests but just between

you and me me and Angel we're gonna eat the dry aged one and the guest is not. I

wish I had more dry aged steak but that was my last one. But now all there's left to

do is to season them and get them ready for the grill. And for that I throw in

freshly ground black pepper and garlic powder and nothing else. Because as you

already know when you have a beautiful steak like this you want to keep it

simple. To grill them the first thing I'm gonna be doing is putting a nice

beautiful sear, then I'll be using my wireless thermometer to cook them in

indirect heat until it reaches an internal temperature of 135. But now I say it is

enough talking and it is time to cook them. So let's do it!
