Good day! Today we are going to make corn bread as a special request by one of the viewers.
What we need is flour, corn flour or polenta, yeast, I am using some caster sugar.
Two eggs, and furthermore lukewarm water of about 30 degrees Celsius.
I will not yet use all the water.
First gently combine this for 2 minutes.
The dough has gently mixed for 2 minutes and now well add the salt.
I will not add the butter just yet. Wait until about 1 minute before finishing firmly kneading.
The corn has been leaked, which well add at the very last time.
Well now firmly knead for 5 minutes and after four minutes well add the butter.
The dough has been mixed for 2 minutes and kneaded for 4 minutes.
Well now add the butter. Initially, it will look sticky, but if you knead for a minute youll see that it will be absorbed by the dough.
Afterwards, add the corn until it becomes a nice whole.
The dough is now kneaded. Ill place it on top of a towel and under plastic for 30 minutes to let it rest.
Because the dough is rather sticky Ill sprinkle some flour on the towel.
The dough has rested for the first time and you can feel that it becomes airy.
Divide the dough to into two pieces.
To avoid sticking, sprinkle some flour on your hands to make it more process able.
Lets see if we have equal amounts.
This one is a bit heavier.
Now shape the dough for the first time and let it rest again for 20 minutes.
Shape it into a ball and let it rest under plastic.
The dough has rested for the second time. I have greased the baking tins and well now give it its final shape.
Stretch it, fold it in three parts and roll it using your thumbs to bring in tension.
And this is the final shape.
Well repeat this for the other ball and afterwards well smear the top with beaten egg.
The dough is now in the baking tins. Smear the top with egg to give it a shiny look.
Afterwards Ill put it away. If you are not using a rising cabinet, to place plastic on it, to avoid it drying out.
A better option could be to place a bowl over it with a cup of warm water.
Let it rest for about an hour to let the dough double in size.
In the meantime Ill pre-heat the oven to bake it.
A little less than an hour later, the breads have doubled in size.
The one is a bit bigger than the other.
The oven is preheated to 230 degrees Celsius. If you are using hot air, reduce the heat a little to avoid it burning.
Bake the breads for 45 minutes.
After placing, reduce the temperature to 200 degrees Celsius and let it bake.
The bread has baked for long enough. Notice that you need to pay attention while baking. If the top becomes too brown, reduce the temperature a bit and continue to bake the 45 minutes.
It should a bit hollow.
