Here’s how to switch off voicemail on an iPhone.

From the home screen select ‘Phone’, and

simply dial 1760,

a message at the end of the line will confirm voicemail’s been switched off.

To turn it back on simply dial 1750,

again a message at the end of the line will confirm it’s been switched back on.

There you go, that’s all there is to it.
