Hey everyone this is Jackie from Vegan Yack Attack!
I'm here today from VeganCuts to show you two new products from Earth Balance. We have
the white cheddar mac & cheese and the cheddar mac & cheese.
Both vegan and both delicious and convenient.
What I'm going to do today is show you how to elaborate on the wonderful white mac & cheese
so we can make a truffle spinach mushroom white mac & cheese. Fancy, right??
So what you're going to need for this is 8 oz of sliced baby bella mushrooms, 3 cups
of baby spinach (might want to pack it as it reduces a lot as we cook it), 1/2 cup yellow
onion diced, 1 clove of garlic (I picked a big one for this because I really like garlic),
1Ttbsp of high heat cooking oil (so you can use coconut oil, here I have sunflower oil
because you can cook it at a high eat like sautéing and it doesn't degrade really easily)
Then for the rest of it I have some earth balance, some non-dairy milk, 6 cups of water.
You'll also need a pot for the mac, and then to sauté you’ll need a nice sauté pan
and maybe a little salt to your taste.
To get started we'll add the sunflower oil to medium heat. Now let’s add the white
onion to this. Sauté for a couple of minutes and then add the garlic because the garlic
is easier to burn here. Now let’s add in the minced garlic. Stir it around a little
bit. Let's add in the mushrooms and sauté those. We're gonna cook these until they reduce
in size and once they are reduced in size we'll add in the spinach because the spinach
will literally take less than a minute to cook and wilt down a little bit.
While the mushrooms are cooking let's get the water boiling for the pasta. Add a few
pinches of salt. Turn that baby up, cover it and bring it to a boil.
Now that the mushrooms have significantly reduced in size, they've darkened and smelling
amazing, we're going to add in some spinach. It's cooking for just under a minute like
I said before until it wilts a little bit we'll add in some salt and ground pepper.
Now I'm going to take it off the heat and let’s just season with fresh cracked pepper
and sea salt. Toss together and wait a minute or two before tasting so that you can adjust
the seasonings as far as salt and pepper go.
Now that the water is boiling we're going to go ahead and add the pasta noodles. Stir
them in real quick so they don't stick together. We're going to cook these for 10-12 minutes
until done and just stir occasionally so they don't stick together. All right, so it's been
10 minutes, let's go ahead and take a look at the noodles. I've put some aside to cool
so I can taste to see if they're done.
All right, so I'll turn off the heat and let it cool for just a moment. Now we can go ahead
and drain the water out so we can make the sauce in the same pan.
Next we'll add non-dairy milk, the 2 Tbsp Earth Balance and their cheese sauce packet.
Mmm that already smells so good. Stir this together making sure the pasta doesn't stick
to the bottom of the pot. Stir until the butter melts. Cook until the consistency is creamy.
I'm doing this over a medium-low heat so that it doesn't burn the noodles or cook them too
fast. And you see the sauce is already very good - nice and creamy. Now you can take this
off the heat.
Next we'll just stir in the spinach, mushroom onion sauté. You can see how delicious it
looks already. And all you have to do is a little drizzle of truffle oil. And be very
modest with this application because it is super potent but adds a very luxurious note
to your mac and cheese. Now you can pretend like you're a chef and treat all your friends
to this very easy to make dish.
Now let's taste it! I'll add a little cracked pepper to mine. Now when you eat it make sure
to stir it up a little bit to get that oil really in your mac. All right the moment of
truth - this is so good!! This is great. This would be a great weeknight meal for guests,
for you, who cares make it for everybody! That's the new white cheddar mac from Earth
