Today I will be making almond, walnut and cashew burfi.
A great healthy and quality substitute for a candy.
Your family will enjoy this.
This recipe will make about 24 pieces.
For this recipe we need:
1/2 cup of almonds
1/2 cup of walnuts
1/2 cup of cashews
1.25 cups of sugar
1/2 cup of water
About 1/2 teaspoon of ground cardamom.
And 1 tablespoon of sliced almonds to garnish.
I am going to grind the nuts and roast on low medium heat.
First I am going to grind the almonds.
Now I am going to grind walnuts and cashew nuts together.
So first I will start the syrup and while syrup is getting ready
we will roast the nuts.
Syrup I will make it on medium high heat.
And put the water and sugar.
And just mix it once.
Now I am going to dry roast the nuts.
And as you see they are coarsely ground.
So I will be roasting these nuts
on medium high.
Which will take about 5 minutes.
Nuts are ready.
You can start smelling light aroma of nuts.
But don't over roast it.
So just it has changed the color and it looks great.
So we are going to take this out.
We have to make the sugar syrup
one thread or 230 degrees on the candy thermometer.
It has been on about 8 minutes
and it should be ready in another minute.
Till it's not upto 230 degrees.
Syrup is ready. As you see it is 230 degrees.
And it's one thread.
It took about 10 minutes.
And I am going to mix this with the nuts.
Nuts I have transferred in the bowl
so it doesn't get overcooked with the hot pan.
This is the time to mix the cardamom.
Mix it well.
And let it cool off little bit before we pour it in the plate.
So we will let this cool off for about half an hour
before we will cut them into the pieces.
While this is still little soft, we will slice them.
And garnish one-by-one.
And we cannot lift the pieces till it cools off to the room temperature
otherwise they will break.
Burfi is looking very good.
I am going to serve almond cashew walnut burfi on Diwali.
It's a good burfi to share with your family and friends for holidays.
