Today I am going to make vegetable pakoras.

They are very delicious and good for the snack.

They are very good serving with drinks or before dinner.

Today its raining and its perfect day to make these pakoras.

Pakoras, chai(tea) and rain they are all go together.

So I am going to make pakoras with potatoes, cauliflower and zucchini

which I have already sliced them thin.

I am going to take 1.5 cups of besan (gram flour).

And 1/2 cup of rice flour.

Mix it together.

Now I am going to add 1 teaspoon of salt.

Salt can be put little bit less or more as per your taste.

We are going to put some chopped green cilantro.

They are about 2 tablespoons.

These are 1.5 medium size green chillies

which I have already chopped.

We are going to put 1 teaspoon of cumin seeds.

And 1 tablespoon of coriander powder

which I have grinded very coarse.

As you see its not very fine.

Now we are going to add about 1/2 cup of water.

And mix it.

It should be mixed well so there is no lumps.

Now we can add about 1/4 cup of water more.

So we are adding the water slowly it helps not making the

lumps in the batter.

And just mix it really good.

Maybe just little bit more water.

So I have really put 1 cup of water in this

with 1.5 cups of gram flour

and 1/2 cup of rice flour.

Now we are ready to fry this and my heat is already on.

So you see I have sliced the potatoes very thin with the skin.

If you have thick slices then they don't get very crisp.

Same way my zucchinis I have sliced them lengthwise.

And my cauliflower they are sliced thin.

And like I said I like to use coarse coriander

because it gives a very good texture.

So lets check if my oil is ready.

I will just put a drop here.

And see it is coming up.

Its ready for my pakora.

So I am going to first do the potatoes.

So you dip them one by one and just leave it.

And they will take about 3-4 minutes to get ready.

They are good if you serve them hot.

You see now they are looking very good.

If you see their color, it is gold brown.

It has been on the oil about for 2 minutes

and I did turn couple of time.

So now they are ready to take it out.

When you are taking them out make sure your spatula is tilted

so all the extra oil is out that way.

And take them on paper towel so that also absorbs some

of the extra oil.

Now I am going to do the zucchinis.

I forgot to mention it should be about inch of oil in the frying pan.

Again same way you dip them one by one.

These are my husbands favorite.

Which he can have any time of the day.

It's very hard to control it because it's fried

so I will not make it very often.

Now I am ready for my cauliflower.

Like I told you these taste good hot but not

every time you can make it just whenever you are ready to eat.

You can make them few hours before

and heat at 350 degrees on oven.

Just warm it up and spread them on cookie sheet

and put in oven for about 10 minutes.

The will come out crisp and hot.

Its ready now.

These pakoras you can make with any vegetables like

onions, eggplant, spinach or cabbage

so anything you have.

I serve these pakoras with hari chutney.

Pakoras are ready.

And really smell and look very delicious.

I am ready to eat.

And I can see my husband he just cant wait

to eat these pakoras.
