We normally add vegetables in our food.

Today, we will make special Spinach kofta curry.

Spinach kofta curry is very delicious.

We will make the koftas in the microwave and the curry in a stove, so that itll be ready quickly.

Lets see what all we need to make Spinach kofta curry.

300-350 grams Spinach (cleaned, stalk removed & chopped)

1 cup gram flour.

tsp coriander powder.

tsp salt.

1-2 minced green chillies.

inch minced ginger.

Less than tsp red chilli powder.

These ingredients are for making Spinach kofta.

And these are for the gravy.

Grinded 3 tomatoes, 2 green chilli, 1 inch ginger and 2 tbsp cashew nuts (minced)

2 tbsp oil.

2-3 tbsp chopped fresh green coriander.

tsp Cumin seeds.

1 pinch Asafoetida.

tsp Turmeric powder.

1 tsp Coriander powder.

tsp Mixed spices.

1 tsp salt (according to your taste)

red chilli powder.

Firstly, well make a batter for the kofta.

Put the gram flour in a big bowl. Add some water, time to time and make a thick batter.

We have stirred up the flour until there are no lumps.

Add coriander powder, red chilli powder, salt, green chillies and ginger. Mix them all.

Add the spinach and mix it well.

The gram flour should bind the spinach.

The batter for the kofta is ready.

It is very thick, we have just binded the flour with the spinach.

We will now make koftas.

Take a microwave safe tray.Spread some oil in the tray.

And take the batter in your hands and make it round.

Place it in the tray one by one.

If you want to fry the koftas in stove then heat the oil and deep fry it.

But we are making koftas without oil in microwave.

We have made the batter and used more than cup of water.

Microwave it for 3 minutes.

Place a grill stand and place the tray on top in the microwave.

Till we the koftas are micro- waved we will make curry.

Take a pan heat some oil, add cumin seeds, Asafoetida and then add turmeric powder, coriander powder.

Fry it a little and make it light brown.

Put the tomato paste in it.

Add red chilli powder and fry till the oil seperates.

We have added cashew nuts in the gravy instead of that we can also use peanuts or some gram flour, coconut, etc.

Take out the koftas.

They are non sticky, when the koftas come out sticky that means it hasnt been well cooked.

Whenever we cook anything in the microwave and comes out cooked without losing its original color.

So here we have our green koftas.

Our gravy is now cooked, the oil has separated from the mixture now.

And our gravy is ready, add 2 cups of water.

The gravy is kept a little thin because the koftas absorb the water and the gravy automatically becomes thick.

Add salt and mixed spices and let the gravy boil.

The gravy is ready.

Add koftas in it and cover it for 2 minutes.

Dim the gas.

Add some fresh coriander leaves.

Let the koftas cook for 2 minutes more so that the koftas will absorb all the gravys water and be ready.

We have cooked the kofta curry for 3-4 minutes in low flame.

Put the kofta curry in a bowl.

Garnish it with green coriander. Our micro waved Kofta curry is ready.

It has come out very nice.

You serve upto 3-4 people.

Serve it with chapatti, paranthas, naan and rice.
